Just made a super easy pan fried, breaded lasagna pocket (lasagna noodle wrapped instead of dough) filled with eggplant, parm, ricotta and mozzarella and finally, finally miles loves something!
Lovely panko-breaded sea trout filet w/sautéed local shrimp, couscous, sautéed Pernod spinach. Simple was the way to go tonight as I’ve been feeling increasingly tired lately. I’d been told it might happen at this point in my recovery. I want to push myself a bit though. 😠
